PT Food Service
This course is suggested for students who are interested in careers in the restaurant and catering fields. We will focus on learning the basics of Food Service. Students will learn the basic inner workings of the kitchen as well as proteins, vegetables, starches and how they interact with other ingredients to make a dish. Students will understand the importance of sanitation and kitchen safety and earn their Oregon Food Handlers Card, as well as the basic fundamentals of the Phoenix Garden and the role it plays in the school kitchen.
PT Culinary Arts I
This course is suggested for students who are interested in careers in the restaurant and catering fields. Culinary Arts I will build on the principles learnt in the Food Service course. Students will learn the continue to work on kitchen principles including: preparing and understanding how recipes work, kitchen safety, sanitation, cooking methods, and how to demonstrate their abilities in the kitchen. Students will collaborate with the Phoenix Garden to bring fresh vegetables into their recipes and the school kitchen.
PT Culinary Arts II
This course is suggested for students who are interested in careers in the restaurant and catering fields. Culinary Arts II will build on the principles learnt in the Food Service and Culinary Arts I courses. Students will advance beyond basic kitchen and cooking principles and learn catering principles and business procedures for work in the professional field of Culinary Arts. Students will learn how to interact with vendors, daily operation of the kitchen, advanced recipe preparation, food presentation, and general catering skills.
PT Cooperative Work Experience: Applied Kitchen and Catering Service
Students enrolled in this course will receive practical, hands-on experience preparing and serving breakfast and lunch for students, faculty, and staff at Phoenix School. In addition to regular Phoenix kitchen service, students will have the opportunity to prepare and serve meals at local events through our catering service.
